ampm Secret Menu

I have been trying to stay on a healthy diet. It is hard because i feel like i am depriving myself from the good stuff. Achieving a weight goal is not easy, along the way there are bumps that i have to go through. Those bumps are my cheat days and i just love it because i can eat whatever i want. On my cheat day i usually get a burger, fries and a large soda. There are many choices out there, and recently i stumbled upon on ampm(Secret Menu Application) on Facebook. My favorite of them are the Hot Chihuahua because i like hotdog and nacho cheese, and the Towering Inferno because it has three burgers, spicy cheetos and again nacho cheese. My little fashionista

It is so cute to dressed up a little girl. I feel like i have a living doll. I just want to share my little girl's recent photos. She didn't want to wear her sunglasses before but she see me and her dad wearing ours whenever we go out so she probably thought she would want to wear hers too. So now everytime i put it on her she's got a big smile on her face and dont want me to take it off even when she is already inside the house.














I drove last night..

And it was my first to drive in the dark. I texted my husband and asked him if he could go to the store after work because we need a few things and groceries. He gets off at 9:30 pm, he texted me back and said he will come home to pick me and Ashley up then we will go to store but i will be driving. After reading his text i freak out a little and think to myself he is just joking. But knowing my husband he really mean what he says. So to ease my nervousness i told myself that i can do it. Of course at the back of my mind i still know that i am feeling nervous. Driving at night is way different from driving at daylight. Your views are limited given that i haven't tried driving at night.

Before 9:30 pm Ash and i are ready and just waiting on him. When he got home he wasn't expecting that we would be ready. So before i get in the car i took a deep breath. My husband told me that i should get use to driving at night so off we go. We stop at the gas station first before going to the store. I did pretty good except that when i did a left turn at the traffic light my husband freaked out because he thought i was going to the oncoming lane. i told him i wasnt going that way and i haven't even pulled out to my left. And i can see where i was going, gosh!! At this point in my driving lessons i need to practice more on parking. I thought i was easy but when i am doing it myself it is not. I can do it when there is no car park beside me but i find it hard when i am going to park beside somebody else's car. I am scared i might hit other car.

We got home safe by the way. LOL!

Egg Pie Recipe

I was craving for Egg Pie so i searched for recipe online and tried it myself. It turned out really good. The only hard part is making the dough because it requires a pastry mixer which i do not have so i just used any available tool that i have in which i think would help me do the mixing. You will find out what pastry mixer i am talking about on the procedure and i will provide a photo of it too.

Ingredients:

Pie Crust:

2 1/2 cups all-purpose flour

1 teaspoon salt

1 cup unsalted butter, chilled and cut into cubes

1/4 to 1/2 cup cold water

2 tablespoon granulated sugar

Filling:

1 3/4 cups evaporated milk

3 pieces raw eggs

1 piece egg, white separated from the yolk

1 teaspoon vanilla extract

1 cup granulated sugar

Cooking procedure:

1. Create the crust

1.1 Combine the flour, sugar, and salt then mix well.

1.2 Add the butter in the middle and mix using a pastry mixer.

1.3 Gradually pour the cold water while mixing the ingredients. Continue mixing until all the ingredients are well incorporated.

1.4 Gather the dough and mold it into a ball-shaped figure.

1.5 Refrigerate the dough for at least 30 minutes to harden the butter.

1.6 Sprinkle flour on a clean flat surface and flatten the refrigerated dough using a rolling pin. The flattened dough should be wide enough to cover a 9 inch circular baking pan.

1.7 Arrange the flattened dough on top of the baking pan and cut the extra edge using a pair of scissors.

1.8 Refrigerate while doing the filling.

2. Make the filling

2.1 Scald the evaporated milk by heating it in the microwave oven for 2 minutes.

2.2 In a large mixing bowl, combine the 3 raw eggs and the separated egg yolk then whisk.

2.3 Gradually add the granulated sugar while whisking.

2.4 Put-in the vanilla extract then whisk until every ingredient is properly distributed.
2.5 Pour-in the scalded milk then mix thoroughly.

2.6 Beat the separated egg white using an electric mixer until it forms soft peaks.

2.7 Fold the processed egg white in the milk-eggs-sugar mixture.

3. Preheat oven to 350 degrees Fahrenheit.

4. Pour the filling mixture on the refrigerated pie crust.

5. Bake for 15 minutes at 350 degrees Fahrenheit then lower the heat to 325 degrees Fahrenheit and continue baking for 30 to 40 minutes.

6. Remove the egg pie from the oven and let cool.

7. Serve for dessert. Share and enjoy!

My Thoughts Today..

It's true that time flies so fast especially when you are not waiting on something and just let time and days pass you by. I can't believe that i have been living here in US for almost three years. And in that period of time my life drastically changed. I have adopted the american style of living but i am not saying that i have forgotten my roots. i am still a filipino by blood, heart and attitude and i'm proud of that.

I want to raise my girl with filipino attitudes, and i will definitely introduce Filipino cultures to her. She may be living here in the US but i will teach her also the filipino way and style of living. I want her to learn the filipino language so she can talk to her relatives in the Philippines. It is also easier for them because they are not fluent in english. So as early as now i am already communicating with her in tagalog. They said that it is easier to teach them and for them to learn while they are still babies. Sometimes i feel she gets confused because i am talking to her in two diferent language.

This coming October we will be going to the Philippines for a vacation. I am going to buy some filipino books so i can teach her to read tagalog words. My husband can also benefit from those books because he is also willing to learn tagalog language. I am so excited!

Distracted

One of the reasons why i was not writing for the past many months was i can not focus. I am always distracted by my daughter. When i am starting to think of something to write here she is either clinging on me or screaming, crying or just want my attention. I have never taken many paid opportunities because it is nearly impossible for me to formulate a sentence. Coming Back... Update and Random!

It's been a very long time since i opened my blog. i didn't update it too for the reason that i have been busy taking care of my angel. she is now almost 14 months old. She's been walking and loves cruising around the house. Yes, our house. We moved in almost 3 months ago and we are so happy that we have now our own space and not sharing walls with somebody else. We have all the privacy we needed and can do whatever since it is our own now.I can hang any decors i want on the walls without thinking of taking it down anytime soon. We also painted some walls. Our house is the biggest investment we have done so far. Atleast we know where our money is going, unlike renting an apartment. We are also happy with the neighborhood we are in because it is so quuiet and peaceful. Neighbors are so friendly. I take Ashley out for a walk almost everyday.And she just loves being outside especially when see dogs.

Theres has been a lot of changes in our life since we had our baby and bought a house. I am also practicing driving. i am enrolled at a driving school, and so far evrything is working good. I have three more lessons with them then im done. My husband let me drive our car around our area whenever we go somewhere. I have gained the confidence, thanks to my coaches! they are awesome! They are so calm and i cant explain the patience they put up on me. I am a first time driver and they were so amazed by how fast i learned the skills. And i'd say it is all because of them. They push me to gain the confidence. I will not say that i am ready to do the road test anytime soon because i still need a lot of practice. I dont feel ready just yet.

When im not practicing, i am just home with my girl. taking care of her because she is so playful now and of course doing house chores. Or just watching TV, facebooking, or anything. Sometimes i wanted to continue blogging but i dont know why i cant motivate myself to write, or maybe because i dont have anything to write or i am just being lazy. weh?! It happens all the time. LOL! I just hope that i can get the motivation to write again after this post. I will try! I want to keep this blog. Because this is MINE!!! :) Anyway, have a great day everyone!! My Ashley

It's been so long. i really didn't have time to update this blog anymore, i have been so busy with my family especially with my Ashley. She has grown so big now. She is now eight months old and is learning to crawl forward cuz she is doing it backwards. Silly baby! It is just amazing to see her learning new things everytime. She is babbling pa-pa and ma-ma. She's on stage 3 baby food and really good in chewing her food. Oh she got two lower front teeth now. actually he started teething at five and a half months. She loves to scream a lot especially when shes on her high chair. She like to watch Taylor Swift's music videos. Singer in the making huh?! haha!

I am so blessed to have her, she is a beautiful baby and i just can't get enough of her. I love staring at her when shes sleeping. Where did time go? Eventually she'll be walking and talking. Time flies so fast. My husband and i are just so excited for her. She is precious in everybody's eyes. She is a little bit spoiled cuz shes the first girl granchild, grandma just can't stop shopping for her. Truly being a parent is so rewarding. I just love being a mommy, my life had changed a lot but i am loving every minute of it.
